Kimberlys' FAVORITE GREEN RICE CASSEROLE
Cook 7 oz. box of Minute Rice…as per directions...set aside. Put one Box of Birdseye Chopped Broccoli in pan with a little water and cook…drain water when finished booking (about 12 min). Fluff rice with fork...then add 1 pound of Velveeta cheese (grated) to the rice...stir...add drained broccoli...stir. Add:
2 eggs 2/3 cup of milk 1/2 cup of oil...stir well. Chop one small onion (fine) then add to mixture. Add 1 can cream of mushroom soup. Add salt and garlic powder to taste. Bake uncovered at 325-degrees for 1-1/2 hours (ok to look really brown).
